1 cup sugar
3 strips (5 x 1 cm) lemon zest
4–5 whole black peppercorns
5–6 allspice berries (optional)

8 mint sprigs1 Bring 2 cups of water and the ginger to the boil in a medium saucepan over moderate heat. Reduce the heat to low, cover and simmer for 25 minutes. Reserving the liquid, strain and discard the ginger.
2 Combine the ginger liquid, sugar, lemon zest, peppercorns and allspice, if using, in the same saucepan over low heat. Bring to the boil and cook for 2 minutes. Cover the syrup and let stand until cooled to room temperature. Strain the ginger syrup and refrigerate.
